Stuck on music theory... Help?

Ok Im working on minor scales. I get how to form them and the whole key thing (a d minor scale is in the key of d minor and is the relative key of F major). My question is if you change the d minor scale into a harmonic or melodic d minor, does the key signature change as well? Or is it just written as accidentals?
