What do you call a bad chemical that formerly mixed on breads and loafs?

When the bureau of foods found out that this bad chemical could cause cancer and not good in man's health,they no more allowed to put this chemical. They also prohibited that breads and loafs should free from this bad chemical. What do you think? I think it sounds Sodium Bicarbonate but I'm not sure. I'm just curious and concern. Thanks!
